Simply Suzanne'sOriginal Chicken Tenders
Great Served by themselves, or on top of the Simply Suzanne Michigan Salad!
- 1 pound boneless, skinless chicken tenderloins
- 1 cup all-purpose flour
- 2 eggs, beaten lightly
- 2 cups Simply Suzanne Original Granola, crushed
- 3 cloves of garlic, minced
- 2 teaspoons chopped, fresh parsley
- 2 teaspoons chopped, fresh rosemary
- 1 teaspoon smoked paprika
- Salt and Pepper to taste
- 8 tablespoons of canola oil
Directions:
- Beat the eggs with a splash of water and place in a shallow bowl. Set aside
- Measure out the flour and place in a second shallow bowl. Set aside.
- In a large sealed bag, place the Simply Suzanne Original Granola, crush with a heavy coffee cup, rolling pin, or mallet. Add the garlic and herbs. Shake to mix well. Pour into a third shallow bowl.
- Salt and pepper the chicken tenders on both sides
- Starting with the flour, dip the chicken in, coating it completely. Second, dip the chicken in the egg, and then finally, the Simply Suzanne breadcrumb mixture. Repeat this process until all of the chicken is coated.
- Meanwhile, heat up a medium skillet with 2 tablespoons of the canola oil.
- When the oil is hot, place 3-5 pieces of chicken in the hot oil, cooking for about 4-6 minutes per side, depending on thickness of chicken strips until cooked through.
- Repeat the process with the remaining oil, until all the chicken is cooked.

Simply Suzanne'sLotsa ChocolateTriple Chocolate Chip Cookies
These cookies are packed with lots of fiber and protein so have a few!
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 stick (1/2 cup) unsalted butter, softened
- 1/3 cup packed light brown sugar
- 1/3 cup granulated sugar
- 1/2 teaspoon vanilla
- 1 large egg
- 1 cup Simply Suzanne Lotsa Chocolate Granola
- 3/4 cup semisweet chocolate chips (4 1/2 ounces)
- 2 tablespoons of cocoa power
Directions:
- Put oven racks in upper and lower thirds of oven and preheat oven to 375°F.
- Whisk together flour, baking soda, and salt in a small bowl. Beat together butter, sugars, and vanilla in a medium bowl with an electric mixer at high speed until pale and fluffy, about 3 minutes, then beat in egg until combined well. Reduce speed to low, then add flour mixture and mix until just combined.
- Stir in cocoa power, granola and chocolate chips.
- Drop 18 mounds (about 2 level tablespoons per mound) of batter about 2 inches apart onto 2 ungreased large baking sheets, then pat each mound into a 2 1/2-inch round.
- Bake cookies, switching position of sheets halfway through baking, until pale golden, about 14 minutes. Cool on sheets 1 minute, then transfer to racks to cool completely.

Simply Suzanne'sCornbread Muffins
These muffins are high in protein and fiber and are a nice twist on traditional corn muffins. Perfectly paired with a bowl of chili your next tailgating or Super Bowl party!
- 1 box Jiffy corn muffin mix
- 3/4 cup of Simply Suzanne Original Granola
- 1 egg
- 1/3 cup milk
- 1 tablespoon of chopped jalapeƱos
- 1/2 teaspoon chipotle powder
- 1/2 teaspoon ancho chile powder
- 3/4 cup of white cheddar, queso, or mozzarella cheese (shredded)
- A few dashes of Detroit Super Premium 92 Octane Hot Sauce (or your favorite hot sauce)
- Salt to taste
Directions:
- Preheat oven to 400°.
- Grease muffin pans or use paper baking cups.
- Combine all ingredients in a medium mixing bowl. Fill muffin pans 3/4 full. Bake 15 minutes or until golden brown.

Simply Suzanne'sMichigan Spinach Salad
The addition of the So Very Cherry Granola replaces croutons and provides a healthier substitute with the fiber, anti-oxidants, and iron found in the sweet and savory spice mixture in the granola.
- 8 cups baby spinach (or mixed greens)
- 1/2 cup Simply Suzanne So Very Cherry Granola to taste
- 10 tablespoons pecans or walnuts, roughly chopped
- 12 grape tomatoes or 2 small tomatoes, quartered
- 8 tablespoons blue cheese, crumbled to taste
- Salt and pepper
- Your favorite homemade vinaigrette
Directions:
- Place the baby spinach or greens in a bowl or dish. Add salt and pepper to greens and toss.
- Sprinkle remaining ingredients over the greens.
- Add vinaigrette. Toss lightly and serve.

- 3/4 oz Kahlua
- 3/4 oz Courvoisier VSOP
- 3/4 oz Grand Marnier
- 3/4 oz Fresh Espresso
- Topped with thin Layer of whipped cream
Directions:
- Put all ingredients into a cocktail shaker and mix well.
- Strain drink into chilled cocktail glass.
- Meanwhile, in a separate martini shaker place the loose whipped cream and slowly stream on top of the chilled liquor. Use a spoon if necessary to help layer the cream on top of the cocktail.
- Top the cocktail with the granola of your choosing.
